A Very Simple Leafy Green Sauté

  • 1/2 pounds of leafy greens including kale, collard greens or chard

  • 1/2 medium onion (chopped)

  • 1 or 2 cloves of garlic

  • 1 tablespoon of extra virgin olive oil

  • 1 teaspoon of freshly ground black pepper

  • Salt to taste


  1. Start by chopping the onions and garlic, then set aside. Do you know that let garlic stand for 15 to 20 minutes before processed help to retain the enzymes that good for our body?

  6. Put in the leaves and sauté again for another 3 to 5 minutes until the stems are tender, the leaves are wilted, and the colors change brighter. Pour a tablespoon of water to the skillet if you think the leaves are getting dry.

  7. Last, add salt to taste the cook.

  • 2 medium red beets, cooked and sliced in 1/4 inch

  • 2 cups of sliced peaches (without skin)

  • 2 medium tomatoes, sliced 1/4 inch

  • 1/3 cup walnuts, toasted and chopped

  • 1/4 cup crumbled feta or goat cheese

  • 1 small shallot, thinly sliced

  • 2 tablespoon minced mint leaves

  • 2 tablespoon of extra virgin olive oil

  • 1 tablespoon of lemon juice

  • 1 teaspoon of minced thyme

  • 1 teaspoon of honey

  • Salt and freshly ground black pepper


  1. Arrange sliced beets and tomatoes (in order) on a platter. You can sprinkle some seasonings to taste with salt and pepper.

  2. Combine shallot, thyme, mint, lemon juice, honey, and oil in a large bowl. Mix and stir them well, then add peach wedges and toss gently to coat.

  3. Spread and arrange well the mixture over beets and tomatoes.

  4. Top salad with walnut and cheese. Put mint and thyme sprigs as garnish.

Nutrient content: 197 calories, 22 g carbohydrate, 11 g total fat (2.5 g saturated fat), 6 g protein, 2 g dietary fiber, and 58 mg sodium.
